One of my guilty pleasures is watching some of the cooking shows on The Food Network Channel–not because I secretly wish I was a renown chef or baker, but because I’m truly enamored with the delightful creations the talented people on these shows can make!  I would love to have The Barefoot ContessaIna Garten, make me brunch…after all her food motto is: “Baking is sharing!”  (Did you know she was a White House budget analysts before she decided to follow her dream to own a specialty baking shop in the Hamptom’s!)

Ina Garten’s casual style and easy, down-home recipes make you believe that she wouldn’t even mind it if you pulled up a stool in her kitchen and snitched a taste!

Lately, it’s been fun to relax on recent Sunday evenings and get into the baking spirit while watching, “The Spring Baking Championship!”

Seriously though, the amazing concoctions the contestants on this show come up with are beautiful works of art and look so delicious–wish they needed another judge! 

Watching this show made me think of our family’s Orange Roll recipe that I’ve often baked this time of year, since my mom’s birthday fell right after Mother’s Day on May 16th, and it was one of her favorite things to have at her birthday dinners!

So easy, right–and yet they look so fancy…your family will think you slaved over them all day!  Sometimes I’ll do half granulated sugar and half brown sugar for a lighter glaze.

Here are a couple of other quick tips: I ‘ve found that if I don’t stack the domino layers too close together, the inside of the rolls bakes evenly with the outer layers.

The rolls should be a golden brown when they’re finished baking, so about half way through the baking time, so I usually cover the top of the bundt pan with a piece of foil while the inside layers finish baking–if your oven bakes hot, you may only have to bake the rolls for 20-25 minutes, just check to make sure the middle is done.

This orange roll recipe is so easy you could make some for dinner tonight…and if they’re are leftovers, all you do is zap them in the microwave for a few seconds!

…luckily this time of year the snow doesn’t stick around too long!

Today the sun is shining and my husband and I are cleaning up around our yard a bit, as well as putting a fresh coat of wood stain on the picnic table on our patio in anticipation of fun patio picnics to come now that the weather is starting to warm up.  One of my very favorite picnic dinners is my oldest daughter, Malia’s recipe for BBQ Pork Sandwiches!  It’s so good and so easy!

One of the very first things my husband and I made in our new crock pot was my oldest daughter’s BBQ Pork Sandwich recipe…so as promised in that post, here’s her easy, yummy recipe!

Aside from the fact that you come home to dinner being nearly ready after a busy day, the heavenly smell that greets you as you walk through the door when you have something cooking in your Crock Pot, seems to make you instantly happier too!

The smell of BBQ pork cooking filled the air as I walked into my daughter’s home the other day after picking up my oldest granddaughter from school.  I couldn’t help but chuckle when Makena took a deep breath and said, “Dinner is going to be good tonight!”

You can use any kind of BBQ sauce that you like, but our favorite is Sweet Baby Ray’s Original BBQ Sauce–it has the perfect balance of tangy and sweet.  Malia recommends that you buy the 40 oz. size of BBQ sauce because after the pork is all done cooking, she drains a portion of the more runny juice from the coke off, then adds more BBQ sauce to the shredded meat before serving.  You can make the sauce whatever consistency you prefer.

Malia also likes to serve the sandwiches with French Bread rolls since they are just a bit more dense and hold the meat and sauce well.

BBQ Pork Sandwiches make a great dinner anytime, but they are a perfect patio picnic meal!

My husband and I hosted a little dinner party not too long ago–my husband is a great cook, so he was in full chef mode, but there’s always the dilemma of what to serve for dessert that’s not too heavy after a nice meal, and can satisfy your sweet tooth…and in my case, it’s always about chocolate!

My dessert inspiration came from the most unlikely of places–the dentist chair!!  While I was waiting to get my teeth cleaned last month, I happened to browse a Family Circle magazine and came across this Chocolate Raspberry Trifle recipe, here is my easy adaptation.

Single Serve Chocolate Raspberry Trifle

1 box chocolate cake mix

2 eggs

1/4 cup vegetable oil

4 egg yolks

1/2 cup + 5 tbsp. sugar

1/4 cup unsalted butter, cut up

4 oz. bittersweet chocolate

2-1/2 cups whip cream

1 tsp. vanilla

2 pkgs. fresh raspberries

Chocolate curls or cocoa powder for garnish

Make cake mix according to package directions, using eggs oil and 1 1/4 cups water.  Line 9X13 cake pan with wax paper and spray with non-stick cooking spray.  Bake at 350 degrees for 35 minutes.  Cool for about 10 minutes and then invert on wire rack, then peel off wax paper.

Since time was a factor for me, as well as food considerations for my guests, I bought brownies from a local gluten-free specialty shop; I love these since they have a thicker consistency and a chewy texture, just cut them into small squares right before serving the trifle.

While your cake cools, combine egg yolks, 1/2 cup sugar, 1/4 cup water and butter in a double boiler, cook while you whisk until mixture read 160 degrees on a food thermometer.  Remove from heat and stir in chocolate until smooth.  Beat 1 cup of whipping cream in a separate bowl adding 2 tbsp. sugar and the vanilla until it forms firm peaks, then fold into chocolate mixture, cover with plastic and refrigerate for at least an hour.

    Again,  for the sake of saving some time and because it’s so good, I combined a 12 oz. tub of Kozy Shack Real Chocolate Pudding (also gluten-free) with 1 cup of whipped cream and 4 ounces of softened cream cheese spread.  (Beat pudding and cream cheese together then fold in whip cream that has been beaten.)  I have another great chocolate dessert recipe that layers chocolate pudding and calls for the cream cheese to be added, I really like the consistency and taste that this combination adds to the Trifle.  

Layer cake squares, chocolate mixture and raspberries in a 4 quart glass bowl and top with the remaining 1-1/2 cups of whipped cream.  Serve immediately or refrigerate until serving.

 I set the individual ingredients of the Trifle out in separate bowls and served  it like a dessert bar, letting our guests personalize their Trifle creations–besides, it’s just a fun way to do dessert.
