I used to make this fun Jello Rainbow Salad around St. Patrick’s Day when my children were little, served up with a few “magic” gold coins, in a creative attempt to help them believe that they really could make all their dreams come true!  It’s an easy salad to make–just takes a little time, but it’s well worth the effort when you hear all the “ooh’s” and “aah’s” that are sure to be uttered when this fun, brightly layered salad is served!  It’s easy to adapt the Jello colors for whatever holiday you’re celebrating.

I find that gently whisking the sour cream into the Jello helps make it creamy without little lumps.  Make sure you put the glass dish where it is level on your fridge shelf so that the layers set up evenly.

You won’t believe how easy Oven Puff Pancakes are to make!  They are a fun spin-off of the original pancakes/crepes we all love!  They make the perfect Valentine’s Day breakfast!  (My family likes them for dinner too!)

I baked my Oven Puff Pancakes in a 9×13 inch glass pan, but like I showed you in my last post, my son and daughter-in-law made them in cast iron skillets…they are yummy either way.  (It’s always fun to see the interesting mounds that form while the pancakes bake!)

We love Oven Puff Pancakes with all different flavors of syrup, but they are just as good served with powdered sugar, lemon whip topping and fruit too!

Oven Puff Pancakes

Lemon Cream Whip Topping

1-8 oz. package Cream Cheese (softened)

1 cup powdered sugar

2 tablespoons lemon juice (or for desired taste)

1 small carton extra creamy Cool Whip 

Beat together well, add a little grated lemon zest!

Red Rock Steak Salad–A Delectable Adaptation!

I think we all have our “go to” restaurants when we want to grab a quick bite to eat and we’re craving something familiar and light–for me and my husband, it’s Red Rock Pub’s steak salad.  Seriously, so good!  On a cold, wintry evening last weekend, we were feeling in the mood for our favorite steak salad, but due to the frigid temperatures and icy roads, (Why is it that winter is never as much fun in January as it is at Christmas time?!) instead of venturing outside, we decided to try and recreate our own version of this delectable salad at home!

Without further adieu, as promised, here’s our adaptation of Red Rock Steak Salad!  I hope this makes your next lunch or dinner a yummy, special occasion!

I like fewer onions and more cucumbers; add to your preference.  Roma tomatoes are good to use too.  For the French bread croutons, simply butter thick slices of bread, then cube and broil on a cookie sheet until lightly, golden brown.  Broil a few slices to have with your salad too!  The Dijon vinaigrette we like the best, that most resembles what they serve at Red Rock, is Litehouse Honey Dijon dressing.

Red Rock serves their salad with a New York strip steak, we usually grill a rib-eye steak, then melt the gorgonzola cheese on top before adding it to the salad.

I think what I really love about this salad is the combination of simple ingredients that create such a nice, rich flavor when mixed together!

Our grilled steak salad adaptation makes a perfect light dinner.  We still like to go out and share the steak salad at Red Rock, along with their wood-fired Barbeque Chicken Pizza every so often though!  ENJOY!
