Sweet Memories!

Sweet Memories Of My Grandpa Mecham!

Black licorice taffy candy will always remind me of the sweet memories I have of my Grandpa Mecham, my mom’s dad!

A Real Cowboy! Gpa Mecham www.mytributejournal.com

Grandpa Mecham grew up a real cowboy, raising and herding sheep during his youth.  He received his business degree by enrolling in extension classes at the local agricultural college while still working on his family farm.  When raising his own family, my grandfather worked in business, selling life and health insurance.  When I was a little girl, my grandpa was away from home much of the work week, usually coming home only on the weekends.  Typically, my grandpa would take the month of August off of work, where I remember that he’d have treats and little trinkets in his suit coat pockets.  Black licorice taffy wrapped in wax paper wrappers was always among those treats.  To this day, whenever I eat licorice taffy candy, I’m reminded of the fun, galloping horseback rides on my grandpa’s back, as well as the silly rhymes and dance gigs he was always making up!

I came across this licorice caramel recipe a little while ago in a Christmas edition of a cooking magazine, and tried my hand at re-creating the soft yumminess of the licorice candy my grandpa used to bring home.

Soft Black Licorice Caramels

Black Licorice Taffy ingredients www.mytributejournal.com

(Please note: Using butter not margarine and Karo brand corn syrup works best with this recipe.)

1 (14 ounce) can of sweetened condensed milk

2 cups sugar        1 cup butter        1/4 tsp. salt

1 1/2 cups light Karo corn syrup

2 tsp. Anise extract (licorice flavoring)

1 tsp. black food coloring (can use food coloring paste)

Directions:  In a large heavy sauce pan, melt butter on low/medium heat, then add condensed milk, Karo corn syrup and salt.

Place a candy thermometer on side of sauce pan, being careful to not let it touch the bottom of the pan.  Stirring constantly, cook candy mixture on medium heat to 245 degrees.

Remove from heat, then add Anise extract and black food coloring.  Pour into a buttered 9×13 pan.  Cool and cut into desired pieces and wrap in wax paper.

One of my coworker’s at the hospital told me that pumpkin chocolate chip cookies always remind her children of their grandma.  I also have a good friend who learned to love cooking from working beside her grandmother.  She has put together an amazing cookbook of their favorite family recipes!  What are some foods, that when eaten, bring back sweet memories for you?

Also, in honor of National Smore’s Day yesterday–who even knew such a day existed–I’d like to give a shout out to Keebler Fudge Stripe Cookie Smores!  To the seasoned camper, I guess this is a well-known phenomenon!  However, I just found out about it from my daughter last weekend as we were buying  groceries to take for an evening in a nearby canyon park!

Cinderella Days! Backyard Water Fun!

Cinderella Days!  Backyard Water Fun!

Cindrella Days!My oldest granddaughter, Makena will start kindergarten in a few weeks, so I’ve felt a little panicked about getting in as many fun summer activities as our “Cinderella Days” can hold!  (I often found that to be the case when my own children were young…all of a sudden August would sneak up on us, and there would still be so many things left to do on the summer fun list!)  Since the tales of backyard water fun when their mom was growing up, along with Uncle Jake and Aunt Mandi, are pretty legendary, the girls decided to put me to the test to see if I could live up to all the hoopla!  (There’s also a pool and splash pad at the townhome where they are living while their new house is being built, so the pressure was on to live up to their expectations!)  Makena had taken swimming lessons this summer, and Marli always seems ready to brave any new adventure put before her, so I knew it was safe to expand their backyard water fun beyond that of running through our basic yard sprinkler!  It seemed like the perfect time to purchase the water caterpillar I’d seen recently at the store, as well as introduce the girls to water balloons!

Legendary “slip and slide” water fun in the making!  Makena and Marli’s mom was about 10 or 11 years old–some 20+ years ago!  Seems like yesterday–sigh!

I think I had them at“water balloons”!  While waiting for the morning to get a little warmer, Makena and Marli pretended their water ballons were their babies!  Their mom did the same thing many times when she was young!

"Miss Independent!" www.mytributejournal.com

“Miss Independent”!  When we were ready to go outside, Marli wanted to put her towel around her shoulders like Makena.  I tried to help her, but knew right away that my help was not wanted!  I love this picture!  Her strong determination will help her go far in life, but in the meantime, it may just drive her parents a little bit crazy!  (I believe it’s called payback!  Ha!)

Getting used to the water.

…she quickly got used to the water and was soon aiming it at me!

Sheer abandonment! www.mytributejournal.com

Marli’s sheer abandonment was infectious and a delight to watch!  I’m thinking that perhaps this should be required therapy for anyone who has had a particularly stressful day!

Water Balloon Toss!  Originally, I had thought I’d have the girls see how many of their balloons they could get in their buckets set a little distance away, but Makena came up with the idea to see how far we could throw each one out into the yard!  She was also cute to show Marli how to throw the balloons harder!  If I’ve learned anything as a grandma, it is to be flexible–often the best outcomes to an activity are when you let grandkids take their ideas and run with them!  Our balloon toss was so much fun!

Backyard water fun!

What a great helper!   Without even being asked, Makena helped me pick up the remaining pieces of the water balloons–so awesome!

Backyard water fun!

Having so much fun is a lot of work!  After I turned off the water and pulled in all the hoses, I turned around to find Makena sitting quietly, wrapped up in her towel.  When I asked her if she was okay, she said, “Grandma, I just need to rest a minute!”  Magic words to a tired grandma’s ears!

Pure Bliss!  What fun it is to watch two cute sisters enjoying a treat and one another’s company!

Polka dot towels! www.mytributejournal.com

Polka dot beach towels and children’s lawn chairs!  For me, there was nothing that said all was right with my little corner of the world than these items!  (I even surprised my husband with a couple of leftover water balloons when he got home from work!)

I wish everyone the best as you make your end of summer plans!  I would highly recommend somehow including water balloons!

Just Breathe…And A Daisy In A Jelly Glass Jar!

 Just Breathe…Construction Is Underway!

Under-construction-signEven in the warm heat of August, I still usually like to get up early and putter around in my flowerbeds when I don’t have to be at work at the hospital.  This year however, it’s been hard to see beauty around our yard since it looks more like a “before” picture on the popular HGTV show “Yard Crashers”!

Driveway Construction www.mytributejournal.com

I’ve had to tell myself to “just breath”…the mess will all be worth it once the new driveway gets poured!

Under Construction! Replastering foundation www.mytributejournal.com

We’ve also had our foundation plaster ground down in preparation for a new coat to be applied!

"Just Breathe" quote! www.mytributejournal.som I’ve had to really visualize the “after” picture of my yard that I hope to take soon!  One thing I know for sure about doing home improvement jobs is that they never seem to go as timely as you think they will, and there always seems to be a few set-backs in this tedious process that tend to draw out the anticipated completion date!

I decided I needed to find solace in this quote, take a deep breath and heed my grandmother’s advice that she shared with me when I was a young girl and helped her work in her lovely gardens.  Rather than focus on all the chaotic disruptions around our home, I’ve tried to follow my sweet grandma’s example of being more in awe of all the beauty around me this week.  I took on the challenge of making a more diligent effort to really look for what I feel makes my yard unique, despite all the construction that’s underway!

My daughter, Mandi, and her husband, Cole, have been here from New York this past week.  After all their big city living, they were craving an outing to a local canyon park!  Living so close to these amazing areas, sometimes we can take them for granted!  It was fun to see the real beauty of them again as we saw how delighted Mandi and Cole were to be there!

What I’m learning now…

I have one of my grandma’s favorite sayings displayed in my kitchen hutch…

"Daisies in a Jelly Jar" quote www.mytributejournal.com

My grandmother raised my mom and five boys, so there was always a bit of chaos going on at their home!  What I’m learning now is that life is always in a little bit of disarray to one extent or the other, so if we’re always waiting for that moment of perfection, we’ll miss seeing all the small pieces of beauty that are all around us…

Daisies in a jelly glass jar! www.mytributejournal.com

…even if it is only a daisy or two in a jelly glass jar!

I’d love to hear about the beautiful things you’ve found in your life lately!
